The meal sounds wonderful. For "provencal" will you use tomatoes and olives as well as, perhaps, herbes de provence? Also, do you prepare the leeks as a separate vegetable?
alas<David Palmeter, I am ashamed to admit I bought the paupiettes already made at the bucherie, but I did serve the leeks, sauteed until they caramelized, as a separate dish.
You prepare those French dishes yourself?
That's impressive. That takes philosophy.
Unfortunately, neither my neighborhood Safeway nor Whole Foods supplies them. I just may try doing it myself one of these days.
